The olives were cold pressed (max 27 degrees C) within 3 days of picking at the Spinelli Oil Mill in Larciano (7 kilometres from the farm). The cold pressing ensures that more of the nutrients are maintained and that the oil will last longer.
Our oil comes from a breathing ecosystem. On this farm, we actively fight global warming by transforming our olive groves into carbon sinks: we practice spontaneous grassing and mulching with pruning residues, eliminating all forms of burning. We reject chemicals and pesticides, relying exclusively on biodiversity and natural organic fertilization. Here, the land is not exploited; it is nourished, so that it can continue to store carbon and protect the climate.
